Setting ride height

Hi guys, opening a minefield here but hope someone will have the answer.
I'm prepping a chassis for racing next year and the regs say that it can be run at 75mm. I can see the advantage of that with lower CoG etc, but read on here that it upsets the roll centres. Anyone running a Stuart Taylor/Aries who can tell me the best middle ground? Not much room to move pickups as will run out of chassis to move upwards pretty quickly.
