I never understand how or if the make water channels or not?

You don't see them in the pictures.

shows him drilling through the block and bores with a long drill before the liners go in, think this might be the water passages for the block.

There is skill involved, lots of it but nothing compared to the amount of patience. Imagine making the block then drilling one of the holes in the wrong place.. argghhhh.

How come he didnt use a single crank?

Unless I'm mistaken, it is a single crank. The extra cam pulleys are for the variable valve timing.
