Engine oil temperature low?

Is this going to be a problem?
The jag engine runs at around 53-55 degrees when cruising, and up to 68degrees when pushing on.
I have verified the temp with another thermometer.

Yeah as above,it's not hot enough to evaporate any moisture that's in the oil/crank case.

So will result in some nice Mayo in the cam cover etc

I had this on an st220 (same engine?). My heart sank when I found the cap full of gunk. Was purely down to the car being used for 5-6 mile commutes and oil not getting hot enough. Seems unusually low that? Are you using an oil cooler that you could delete to see what the temps do?

Similar crankcase as the ST220, I removed the oil cooler, that may be the problem. I may have to find a way to refit it

Is it a water/oil heat exchanger type?

That's the one. Standard fitting, but I had to remove it to get the engine in the MK. Doh!

Could you slave it back in remotely to see the effect it has on the oil temps?

The modine helps get the oil up to temp as well as cooling it once the oil gets hotter than the coolant.

It balances the temps of the engine

I've had a few people ask me to look at there cars when garages have told them the head gasket has gone,to find out they never use the car for it to get hot enough to evaporate the moisture in the oil/crank case!
