testing out carbs

i have a set of carbs that are about two years old.

They've been sat a while and the fuel obviously evaporated from the bowls.

could i use a air compressor gun and blow air through the inlet just to see if the venturi effect drags the fuel out.

it's just a basic test so i can put them on my rebuild engine to run the cams in,

If they are bike carbs they are quite easy to strip down. I'd take the jets etc out and soak everything in carb cleaner and use an air line before reassembling. if they aren't bike carbs I can't help!
