I was wondering what normal running temp is for a bike engine?

My Triumph is running at about 81 normal driving.

What do people run in there water systems

Just water or water and anti freeze or water and ?

whats the best mix %

an r1 engine runs at 94-100, the fans come on at 104 deg. the warning light comes on at 117deg.
in the car, my engine runs at about 72-74deg.

Lee my Triumph runs at 80-85 when I pootle about, and gets up to 102ish when I rag it or sit in traffic.

My R1 sits at about 78ish when moving; climbs to 105 when stationary when the fan kicks in.

As regards coolant I go with whatever the manufacturer recommends. On my crosser that's 50/50 ethylene glycol and water (the R1 gets serviced by someone else, but antifreeze is used).

Race bikes can only use water, no antifreeze, because it's slippy as sin and they don't want it getting spilled on the track. And race bikes generally don't get used in very cold weather

If you do use water only, remember to drain the cooling system over winter or risk a cracked engine

My R1 runs between 80-90' depending on the ambient temp' (so I'd expect it to be around 80ish at the moment). It gets higher (95?) on summer track days. Fan cuts in/out at 105/100' and it's quite happy sitting doing that.

I run 60% water, 30% a/freeze, 10%water wetter (improves conductivity). Don't run without a/freeze as it's also anti corrosive and lube for the pump... and my workshop was down to -15c some nights this winter.
