P.S. The height of the standing units sounds about right but our kitchen ceiling is only 7' high so that really decides it for us. They are set at ceiling height.

The height is usually set by the tall floor standing units. The wall units align with the top and the distance between the work surface and the underside of the wall unit is automatically set.
Set the cupboards so your wife/girlfriend can see into them and reach all the girlie stuff in there.

pretty sure there's a minimum height above the hob (to stop them catching fire??) don;t know what it is though

You should never install units above a hob, unless you install a cooker hood under the bridging unit.
Flammable materials above a heat source is a NO NO!
I can't remember who, but someone on here can do you a good deal on a cooker hood.

Height above the cooker is normally in the details supplied by the hood manufacturer, about 2ft9 minimum in proper money,
cupboards, it depends on what tiles you wish to use, but approximatly 18-1/4 inch is pretty normal if your using the older 6inch size,
but measure the tiles and add for grouting a couple of inch either way looks okay,
I'd put just at the right height to whack you temple on the corners.
Thats the height mine are set at.
Plus I'd just like to add the bedroom door is just at the right height to get your toe under...
