I am considering powder coating the sheet for the floor (both in and out). How tough is a powder coating? Actually considering drilling all the sheets, cutting all the access panels then powder coat all the panels. Will it last?

yes it will last we do it on all our factory buit cars now.

Unless your panels are steel, it's unnecessary and will look worse with wear than bare aluminium sheet once scuffed and scratched from feet.

If you predrill all the panels, then have them powdercoated, you'll either have to drill your holes oversize to account for the thickness of the powder coat (and give inferior mechanical location) or clean out every hole after coating.

I have bare alluminium on my floor pan powdercoated does look good. Personally if I had a powder coated floor I would place skate tape to it due to how slippery it can become. I will be doing this on my alluminium floor where my heels touch

I'll be doing this shortly on the Striker, Ive just orded some clear coat and some orange flake from Electrostatic magic to do some trials on how the combo of black and orange flake will look, or just a clear gloss on the bare aluminium will look.

If MK have started taking the blue covering off the ally, their factory car floors should look infinitely better

Powder coating is only as good as the preparation . I spent last winter stripping my car to the bare chassis and having what remained of the powder coating blasted off.

Outside I would agree might be optional, really depends on the cost.

on the inside of my floor I've used protectakote anti-slip paint to a) not be bare metal and b) avoid slipping. the finish is pretty good and wasn't too expensive. on the underside I've used underseal (i know a lot of people say not to but i'd rather not risk water ingress etc).
