My clutch and throttle peddals have different size holes where the cables will connnect to the clutch is around 5-6mm diameter where the throttle is 2-3mm diameter is this correct.

i've got M6 bolts in both my pedals.

i had to drill one of mine bigger so i guess it was the accelerator.

thats normal, just redrill if required. all depends on how you are fixing your cable to the pedal, i have drilled mine for m6 bolt
