final drive gear ratios

Some advise needed here,
I am running a Suzuki TL1000R in a 350k car,
Tire size is going to be around 25" dia---- 79" circ so quite tall,
Factory ratio on the bike is around 2.3-1

suzuki tire works out to be 24.5" dia----- 77" rolling dia, I can match the rolling size almost exactly

What ratio do I want to run in my Atlas, obvious choices are 3.09 or 3.44

obviously the 3.09 will give better cruising, but I dont want to load the engine up too much or I doubt if I will ever want to go much above 120mph

too low diff ratio will make it a bitch to pull away without stalling.. (embarassing at a junction) i have a 3.92 in my gsxr and it pulls away with ease and max out at 110... going to go down to a 3.62 for slightly more fuel saving at 70mph but not gong any lower due to not liking to scream the nuts off it to pull away..
