Answer I've usually seen is "leave the bits that stop you rolling it around until last"
I think we're doing it in roughly the order interior, instruments, engine, electrics and whatever else is left, then rear subassembly (diff,
shafts, hubs all off as one bit), handbrake bits, front wheely bits. That's just our guess so far though.

you will find it makes life much easier when lifting the engine/gearbox if you hack out the front chassis crossmember first.

Staple,
You might aswell lubricate now the bits that might be hard to get out later (diff mount bolts etc.) so that the lubricant has penetrated nicely by the
time you come to remove them.

i've gone about it slightly different:
i have already 'aquired' for free the following from 2 other sierras:
full rear end, includind diff, drive shafts, etc etc.
front uprights, calipers, disks etc
stearing rack
Type 9 box
i'm in the middle of a process of: stripping, blasting, refurb then new paint this will give me the advantage that i can build up a rolling
chassis and then tow away my (still complete at the moment) donor....
the only difficult thing i have found to get out has been the rear diff mounting bolts (i can get the nuts of easy enough, but the bolts are stiff to
move....)
Please feel free in advance to: correct, update, ridicule or laugh and point at any comments made by myself in this post....

Cut the front panel, take the gear lever off,get the back end as high as you can on blocks or ramps, take the prop shaft off and the gearbox Xmember
and prop the back of the box up till you get the hoist on the engine. Then tip it on its side and take the diff and driveshafts out after.
yours, Pete.

yours, Pete
I went into the RSPCA office the other day. It was so small you could hardly swing a cat in there.
