Calling Volvo experts ;)
Anyone know which models/versions/year of the volvo 850 had an M56 gearbox and a single mass flywheel

AFAIK every 850 has the same gearbox and flywheel, except for the diesel and AWD ones. There versions differ in ratio and driveshaft type, depending
on the engine, not the model year.
Some small changes were made over the years, one I know of is the speedo pickup that got moved somewhere along it's lifespan.
I could look it up in VADIS, but that might take a while. U2U me if you can't find the answer and I'll have a look

also , clutch operating changed to concentric at some point too .
like i u2u 'd , the lesser models may have a 228mm clutch , altho i think its the same flywheel.
ask for a flywheel and clutch on t5d5.org and im sure youll get one quite easily .....
