At the minute, im building my indy R1 and my mate is restoring his mini GT, which is good. But now we are deciding to build a side project
It'll be a non SVA'd track/race car.
For this project we hav gathered up bout 2k tho cant start til april when his garage is free!
So heres my Question. What engine should we use? We need ALOT of power, mid engine and easily tunable, preferrably a car engine. Cheers!

4age, k series

both light and reasonably compact and tunable.

big audi engine on a transaxle. a v6, quattro or similar i'd suggest?!

go with ned's audi idea. get the transaxle with engine complete, bigger the better, then carbs etc. lots of power, minimum engine/axle mating hassle (trust me, can be big headache!)

Why not the Honda B Series engines. They are very cheap to buy and build.

Here's some inspiration...

This lad has pulled out ALL the stops and doesn't seem to be following a "lo-cost" plan. But... it's some good inspiration for a track-specific car. I think this'll make most track-day machines look very slow indeed.
