This may seem a silly question ... BUT what is the little braket for on the bottom of the MK Indy brake pedal ....?

It may be a stop so you can adjust pedal to sit how you want it???

Yep, it's a stops, you just put a bolt through it which you can adjust the length of so that it hits the floor and stops the pedal falling too far forward.
