I was thinking of fitting a fiesta master cylinder for the brakes. It has 2 outputs,which one goes to the front brake and which to the rear for correct bias?

That won't affect the bias and would mean more lines in your tranny tunnel.

Sierra? Aren't they the same type of master cylinder?
With the sierra would I not have 1 pipe going to the rear and 2 pipes in the front?

The Fiesta one has 4 outputs, Could I just block one of the rear ones so I have 1 rear and 2 in the front?

Or you could put your brake light switch in one of them and save buying a T piece
