I think the steering column would be the easiest thing to modify, I can see no reason why you could not use a column off any car, airbags not withstanding

I should be using a Manta column, nice callapsible bit, I have a few laying about, nice standard steering wheel so it doesn't look complete toss for the SVA, and if I decide to keep the stalk (there's only one on it) then as I will have no screen or wash/wipe, I can use the stalk for horn (use the wash button), lights (use the wiper selector), dip/main and indicators, thus having very few other switches (only the foglight as far as I can think, the hazard is on the column too)

Also the stalk is nice and metal and not horrible and plastic and bulbous.

I'll be using a mk3 escort column, and steering wheel until SVA, then its out with the alcantara momo

My donor car was an SD1 Rover V8. I used quite a few bits from it, including the steering column. It is collapsable, and adjusts up, down, forward and back. I hope this will make it easier to get in and out of the car. I am keeping all of the column mounted switches for lights, wipers, and indicators.

Cheers
