Ok what am I doing wrong, I don't seem to be able to wind them back in ?

Both sides clockwise ? Is it possible they have come out to far, the pads where almost to the metal ?

Both sides turn clockwise to reset. They need to be pushed hard at the same time as turning. Some times it takes more presure and force than expected to get them started going in.
Are you using the proper tool or improvising?

Use a clamp at the same time to apply pressure to the piston as you wind it back in, always works a treat!

You need presure on it as well. G clamp works well but you'd need to use grips to turn as the clamp gets in the way of the AG spanner. Bit of a 3 handed job without the right tool but do-able. Don't opperate the lever after untill you've pumped the piston out with the pedal.
