Hi guys,
I've bought a set of team dynamics 1.2 wheels in 7x13, do you think I will get away with running 185/60 tyres, much wider on the front and I
think I will run into rubbing issues. On the rear I can fit 205's.

185/60/13 will be fine on 7" rims as will 205's. 6.5" might be more ideal but the 7" is within the recommended range. I'm running a set of the same without issue.
Also pay attention to tyre pressures - most recommend between 16-18 psi to achieve a balance of grip and ride quality. I know on my MK Indy I ended up around 16/17 psi on 15" rims and tyres, which gave a good balance. Harder than that made it slide around a little in the wet.
So these will fit over my Sierra hubs on my Indy then?

With the right offset yes. May also have to fit a shorter handbrake return spring (if rear discs).
as Nick said above about the tyre pressures I have 185 and 205 , 15's front and back and initially struggled to get "my head" round such a low tyre pressure so set them at 25 psi to start with and I felt every piece of grit and had a few exciting moments, so I bit the bullet and dropped to 18 all round and the difference was unbelievable, the handling is transformed she is not as skittish and feels really good, still have a bit of bump steer to sort out, and a lot comfier ride too
