can anyone tell me what I need to connect to the fuel tank if im going the carb route? i.e. does the engine suck the fuel out, or do I need a pump?

You will need a pump.

Just make sure you have a pump designed for carbs and not injection otherwise you may be calling the fire brigade out!

Or fit an adjustable pressure regulator such as a filter king one and run pretty well any pump you want - within reason.

Get the pump that goes with the carbs from the same bike and all will be well.

Mount the pump down next to the bottom of the tank. No need for any regulators or the like.

That's what I'm using, with a Filter King regulator.

I haven't used it out on the road yet, so I can't say whether it's OK or not! Supposedly good for up to 130BHP...
