What did your mates wheels come from?
If it was a Sierra then the offset is around ET38 that is if you look at the center line of the wheel the hub mounting face is 38mm towards the outside of the wheel pushing the whole wheel towards the inside of the car.
The Escort had an ET of 15mm thats why Escort wheels have a much deeper dish
than Sierra.
Car Wheel Bible has diagrams.
Ultimate wheel and tyre size is up to how you want the car to look and the gearing you want.
As a rule of thumb 205 - 50 - 15 has a similar rolling radius to 195 - 55 - 14 and 185 - 60 - 13

If using 6" wheels, ET19 is what Ford used, so in 13" you are looking for Capri, Cortina wheels. Above that size you will probably need aftermarket wheels with spacers. PSA wheels have the same PCD but a larger centre bore and the rough offset so if you replace the spiggot rings you could get a bargain from some chav cast offs from the 106/Saxo brigade.

See attached guide and all will become as clear as mud

If you can keep you head, whilst all others around you are losing theirs, you are not fully aware of the situation

Cheers for that, its a minefield,

I was thinking 195/50/15 with a ET15 offset... will that give me enough clearance,

Are there any rules on how close the wheel can be to the trailing arm, its got a clearance of about 3mm at the moment but i have checked a Offset calculator and with the spacer i have and the offset at ET15 it should be around 10mm clearance, is this enough???

10mm is plenty of clearance. I used 29mm offset wheels with 10mm spacers, just about perfect.
