Keeping it all straight

Current steering column uses 2 Uj's to connect to the rack - no problem.

New engine (RV8) means this no longer works and an extra kink, possibly using an additional 2 UJ's will be needed to re-engage steering.

What's the favoured method of keeping this lot in some sort of order, and not just clanking around between engine and frame?

For every extra joint over 2 you need a support bearing for that joint. If you can get a rose joint over the shaft before you weld it (or each section comes apart) then that is one method. You can also get pillow blocks with bearings in them which do the same job.

If you cant get anything onto the shaft you can make a two piece support bearing out of nylon or similar like i did. Have a look in my photo archive to get the idea.
