
If I adjust the seat so I can press the clutch fully I never get to fully extend my right leg which gets uncomfortable after a while. However if I
move back so my right leg's fine I can't press the clutch properly.
I've thought about fixing a small block on the clutch pedal to compensate but then I think I'll be having to lift my leg too much..
Any ideas?
Get your legs adjusted so they are both the same length 
Good point, they're both equally too short!
If you have room, put a "deadman's" pedal just to the left of your clutch. Basically a solid footrest.
You will be able to rest your foot on that between gearchanges.
Built up shoe for one leg?!
Get an automatic ?
Don't use the clutch...

Small cars --- the pedals are always offset from the drivers seat centre line
I've got some sort of footrest there, the problem is I'm extending my left leg fully but never my right... Did I mention a small extension to the pedal, is there something I can bolt on that's legal?

If possible do what some manufacturers do and set the throttle pedal further away from the seat.
The clutch and brake are in line and the throttle is stepped back

I dont think you can adjust on tip top unless you bend the pedal arm which I wouldnt suggest
