I want to make a new dash like the one here, can i use copperpipe to make the framework or can someone recommend an alternative.

Not sure coper pipe would last long due to the twisting etc. of the chassis.
It would also dink or even fold easily if you caught it with your leg or something.

getting the large radius curves would be the most challenging unless you had a ring roller.
it probably would be feasible in copper but it wouldn't be a first choice. it'd have to be brazed as solder joints would come adrift in
weeks if not days of driving i reckon.
what about plastic water pipe cut in half then fastened on a more solid substrate? ali?

Have you thought about using something like 3/4 dia black conduit like electricians use, it bends reasonably easily and the bonus is that you could weld it.
Don't forget that the lower surfaces of the dash will need a minimum of 19mm radius if going through an SVA test.
