My favourite is a ball bearing down each cylinder. Though not particularly quick to do.
I think in the states the authorities run the engines f confiscated car with some sort of resin until they stop

What about replacing the oil with some kind of liquid which sets when it reaches the right temperature?

What are you looking for exactly? Rapid violent destruction, slow but stealthy, or artistic impression? I'd say chucking a load of sand/gravel
in the intake might be good for the first, some sort of coolant system sabotage (slash a hose) or fuel/oil contamination for the second, and I'll
need more time to think of something interesting for the third

Yup- my mate found someone had slashed the lower radiator hose on his work van (presumably to follow him and do him over a little up the road- he's a jeweller). Nasty- the light won't come on because that's normally bathed in the coolant. No coolant- no heat transmission, first thing you know is the engine seizing....

replace the oil with watered down grinding paste and rev it to the max ubtil pop.
Feed the inlet with propane, and replace the fuel with alcohol.

If you want something quick swap the petrol/diesel and for artistic make the throttle cable a little sticky

when i was a mechanic i saw a guy who had cleaned the air filter on a escort diesel van with brake cleaner solvent stuff he then stuck it back in the
van and started the engine it went off like a bomb reving like mad he took the keys out and just stood there as the engine kept on reving higher and
higher until it threw a rod,i could hardly stand up for laughing.
i have also seen plenty of recked diesel engines that have blew up due to running on their own engine oil.

Think that just make it go like f**k, however if you put it in some tin foil and stuck it to the top of the block when it ignites it'll melt through
My grandfather used to run pollution boats and he told me about the time the "boys on the refinery jetty" gave him a bucket of Naptha to clean the floor of the engine room after an oil leak. His deckhand duly did so without shutting the diesel boat motor down. Engine revved itself to bits.
For stealth, just undo the sump plug a couple of turns, that way after they check the oil and set off, and eventually the oil pours out and the engine
goes a bit funny, you could also remove half the cam belt.
For quick, some sand in the oil?
Rewire the dash so that the wrong warnig lights come on, then do some thing nasty and watch them try and fix something that isn't broken.
While you're at it you could rewire the gauges so the engine fries while they think it's still warming up and they get clocked for doing 60 when the speedo says 25

Swap the Speedo and the Revcounter round, that could cause some confusion.

When the middlesex RS owners club used to have the annual big meet local to me, they would trailer in an old ford (last one i saw Mk 1 escort 1300)
remove oil/water start run at full chat and take £1 a ticket for times of complete failiure.
I had 1 minute 37 seconds for the escort, i was gutted when the official time was 1 min 35 secs
