Is the general feeling that 160A is going to be enough for general DIY fabrication? I probably have the option to upgrade to a 200 provided I am

I've yet to wind mine up to over 100amps if that helps
Invest the extra in a small water cooled torch, much nicer to use and does not get hot in your hands, make a cooler from an old central heating pump
and a tank.

If your not intending to weld much ally then it should be ok , when i made my inlet manifold I managed to nearly melt the non water cooled torch on
the tig set at work as ally does need a lot of current if your welding something a bit bulky.
