What is the distance from one wheel mounting face to the other on a book chassis ?
Is it wider using Sierra hubs?

Do you mean from hub face to hub face?
If you do mean that but with book wishbones then I suspect (but not sure 100%) that it'd be a little wider with Cortina as the BJ to hub is a
little larger IIRC.
