Clouty Pudding..
well, I've tried to replicate my late grannies clouty pudding and its always a wet disaster.
Anyone got a recipe/method for a fluffy coulty pud??
For all you southern peeps imagine a spotty dick, without raisins, the size of a footy, stuffed with with steak & kidney yummy

You can't go wrong if you follow the goddess Delias' instructions. I love her recipes.

Sounds like a traditional steak and kidney pudding to me (rather than pie). Googled for "Cloutie" (as clouty got few hits) and all the
recipies I have found are for a sweet pudding.
Only one thing wrong with steak and kidney....the kidney <shudder>

Clootie Pudding - Scots cloot = cloth.
Suet pudding with fruit, steamed for 3 hours wrapped in a cloot. Great with custard and jam.
