I'm having a problem with the Raceleda setup, where the hub bolts are hitting the calipper support bracket (on one side, the other is marginally
safe).
Check please the red arrow.
Can you please post some pics of a similar setup?

You could either use normal hex head bolts or grind the cap heads down a bit.
Personally I wouldn't use those crinkly washers either either a normal spring washer or none at all with a bit of loctite.

mine have about 3mm clearance - are you using the right spring washer? And shallow head bolts?

Yeap... change the bolt type seems to be the answer...
How close can I leave it? It's supposed to be fixed anyway... not a moving part so I guess pretty close can be an answer...

1mm is plenty, until your bearings wear out! My mate put some alloy wheels on his car which gradually took the writing of his brake calipers!
