Hi
I was just sitting here eating my lunch when something occured to me...

How do you know when Blue cheese has gone off?

It will be hard on the edges and furry. And the bad mould will make you sick.

Now for a general cheese Q - iirc all cheese spends ages maturing etc. How come when you buy a piece there is a use by date on it for maybe 7 days time? How do they know the precise moment that they need to wrap it up and sell it so there is a few days left?

The furry mould on the blue cheese makes it taste better! Over here they only throw it away when it's got maggots living in it.

Maggots are full of protein!
