Have I understood this correctly
The edis unit will send a signal to the coil pack to spark the plugs even if it is not plugged in to the ecu?

Correct - it's a good test of all of the basic connections. You will need the VR sensor plugged in though.
In this setup (VR sensor - EDIS - coil-pack) the ignition timing will be 10 degrees BTDC. This is called "limp-home mode" so that you can
drive home if the ECU packs up.
yes 10 btdc, provided the trigger wheel and the crank sensor are aligned correctly.
