If your making your own loom keep it all.

Failing that keep the plugs for the coil and crank pick up sensor.

If you wanted to run the mondeo ecu you will need the engine loom upto the plug near the battery. You will also need the antena from around the column.

And a few other odds and sods.

Keep it all now as you can bin what you dont wont later.

Id take out as much as you can of everything. Dumping stuff at the tip is far easier than rummaging round a scrapyard in the middle of winter lol

i'd just keep everything til you decide:
a) if you're making your own loom, or buying a made one
b) if you decide to reuse wires or use all new wires

personally, in order of preference, i would
1. buy a loom from someone who can make you a custom one (i know someone who does this so i'm fine)
2. make my own with all new wires
3. make my own with old wire
4. reuse old loom, taking out the bits you don't want
