As my chassis is powder coated and haven't got a welder I was thinking of scraping back the powder coat and drilling through the welded on plate
metal that makes up the passenger footwell and then putting a bolt into it for my main earth point for engine and battery.
Can anyone see this being a problem as I figure it should be ok given that the plate is welded to the main chassis.

That's exactly what I've done on my MK.
I chose the piece of plate that's welded across 2 chassis members to form the engine mounting point. I've used an M10 stainless bolt and
metal locknut.

something you haven't mentioned is that the engine needs earthed to the chassis as well
