I am looking for a steering rack for a car with a central seat. Most racks have the pinion at an angle to the rack. Does anyone know of a steering
rack where the pinion and rack are at 90 degrees? I only need the rack and pinion so the casing shape does not matter.

You're going to need exactly the right rack length to work with the rest of your suspension geometry, otherwise you'll get some degree of
bump steer, so why not just call Titan or Jack Knight and tell them what you want, complete with choice of ratio?
In the grand scheme of things, the cost isn't that great, particularly if you only want the rack bar and pinion, not the housing.
The alternative (unless you faff about shortening/extending the rack bar) is that you have to let the tail wag the dog, with the rack length and
steering arm geometry of your uprights dictating the rest of your suspension geometry, which doesn't seem sensible?

nothing suitable it appears as the Fiat rack is at a very slight angle.
