You would be best asking the companies that do the dipping as they will use different chemicals from one company to another.

my initial thought would be that they are all going to say it will damage the bearing faces as it would make me buy new bearing from them, lol

Putting an item that contains parts that are different metals in an acid or alkali bath will always have potential problems, if it is tarry deposits you want the clean off why don't you try a putting it in slovent bath of gun wash thinners for a few days. To make up for evaporation you can add some kerosene to the bath, this will help prevent rust when you take it out the bath.

If you can find someone with a Turco Transpo tank, use them. I used it to clean our aircraft engine. It dissolves carbon and paint, washes off with water and does not damage metal. Only downsides are it's bloody expensive and stinks, and probably wrecks your lungs too, but it is just magic. Pop a set of pistons in overnight, quick tickle with a brush then wash - as new.

my head came back all nice and clean with new cam bearings fitted (along with the bronze guides / 3 angle valve seats I wanted)
but I would have fitted new bearings anyway as the old ones had done 151k

the bronze guides and valve seat cutting cost a few £ a valve, but the dipping / fitting new bearings was hardly any extra
(mind you I did have quite a lot of work done to the bottom end at the same time....)
