locost meal for two
SPAM VEGETABLE STRUDEL

1 pk Long-grain and wild rice
-mix (6.25 oz)
1/2 c Chopped carrot
1/2 c Chopped red bell pepper
1/4 c Orange juice
1 cn SPAM Luncheon Meat, cut in
-thin strips (12 oz)
2 c Chopped mushrooms
1/4 c Sliced green onions
1 tb Dijon-style mustard
1/2 ts Basil
1/4 ts Pepper
6 Sheets frozen phyllo pastry,
-thawed
Butter-flavor vegetable
-cooking spray
1 tb Dry bread crumbs
Soy sauce
Heat oven to 375'F. Prepare rice according to package directions. In
small saucepan, combine carrots, red pepper, and orange juice. Bring
to a boil. Cover and cook 5-7 minutes or until crisp-tender. Drain
well. Place in medium bowl. In large skillet, saute SPAM, mushrooms,
and green onion until tender. Add SPAM mixture, rice, mustard, basil,
and pepper to vegetable mixture; stir well. Place 1 sheet phyllo
pastry on a damp towel (keep remaining phyllo covered). Lightly coat
phyllo with cooking spray. Layer remaining 5 sheets phyllo pastry on
first sheet, lightly coating each sheet with cooking spray. Spoon
SPAM mixture lengthwise down center of phyllo stack, leaving a 1/2"
border. Roll phyllo jelly-roll style, starting with long side
containing SPAM mixture. Tuck ends under; place diagonally, seam side
down, on baking sheet coated with cooking spray. Lightly coat top of
pastry with cooking spray and sprinkle with bread crumbs. Make 12
(1/4" deep) diagonal slits across top of pastry using a sharp knife.
Bake 20 minutes or until golden. Serve with soy sauce.

Simple meal .......
take some veg, eg carrot, bell pepper, baby potatos, olives, onion, mushrooms
preheat oven to 220 degrees
take a baking tray, pour in some olive oil,
clean the veg,
cut the veg into 1/2 to 1" ish chunks,
put on baking tray
add more olive oil
add garlic, chillie, basil, rosemary, (ok, any herbs you like)
mix together,
bake 40 minutes, turning every 10 - 15.
near the end mix up some gravy - bisto instant gravy is ideal
serve - low calorie, very filling and .... good for you!
if you want some meat, near the end fry up some chicken with similar herbs, or, roast some chicken while the veg is cooking.
(guess what my tea tonight is going to be )

Wine - well white is the obvious choice with it being veg based, i'd go for an italian pinot grigio - very easy to drink, not expensive, should
add to the miriad of flavours in the roasted veg with all those herbs.
If you wanted to try something different, go with a chillian merlot. The fruitiness of the grape may be lost in the spices but it should wash down
well and the chillian grapes are comparitively cheap.
(now who believes i actually know about wines?)

I was very hungry but wanted some different ideas.....
problem is im a little bit sick.....
and eating is a problem
but i will do that one tomorrow with the veg

Boil kettle
add contents of one cupasoup (golden veg with crutons) to one big mug
pour of the boil water over contents in cup stir til no lumpy bits (if preferred)
then take two spoons and share.

Take two pieces of white bread, place in toaster until brown, coat with butter and cover with cheese, add worcestshire sauce . Place in microwave for
approx one minute until cheese is melted . Works for me..

If you're doing the cheese on toast,
grate the cheese into a boul and add finely chopped onion, now put that on your toast and melt.
(also rosemary is excellent with cheese, had it in france with a croque monsuire & became hooked)
Defo agree about the worcester, also try brown and ketchup.
If you want to try a different cheese, Lancashire cheese is an excellent alternative to cheddar.

Take one slice of cheap low quality white bread (preferably borrowed), cover one side with cheap low quality tomato sauce (supermarket home brand is
best or alternatively ask someone who is going to MacDonalds to fetch an extra sachet out - that way it's free!), fold over. Eat.
