Oil Pressure
what sort of oil pressure should i expect to see on my pinto, my gauge reads about 3 bar when im flying along and then drops slightly when im
stationary (understandable), does this sound about right?

Should be 8-10 psi per 1000 rpm so that is about right, 3 bar is about 43 psi.

With a high pressure and high capacity pump on a rebuilt engine with new brgs etc I see 40psi ticking over and 100ish under power.

so going from the information above i have a low pressure oil pump, is it worth the investment to get a high pressure one, whats involved and
replacing it and is it a big job, i.e can i do it with thw engine in etc

Not really, I only fitted one as I rebuilt the engine and I got one for the same price as a new std one.
Its a sump off job to change it.

There is no difference between a "high pressure" (as opposed to high capacity) oil pump and a standard pump.
Unless the bearings are worn or oil is excessively thin the maxim oil pressure is determined by the pressure relief valve.
High oil pressure is not an aim in itself in fact excessively high oil pressure can cause problems, the reason for having an oil pressure gauge is
purely to monitor for drops in oil pressure from the known normal behaviour of the engine.
