Does anyone know which jets i need for a pair of 40 dcoe's on a 1.8 zetec?

Any engine builder/tuner will tell you the same. It is down to so many variables, even down to which plugs, engine wear, climate, altitude etc etc. Never mind what cam you have.
Ring Dunnall engines (Kent?) they should be able to give you a starting point - but don't blame them if it's not spot on. You really should spend some time on a rolling road. By the way it is not just main jets, it could be emulsion tubes, chokes....and it can get quite costly. If you have done nothing to the engine it may be considered a bit overkill.
