Just been messing around today to get a feel for the car before my first test on Tuesday and when clutch is fully down the car still tries to set off
as revs rise!
Never had this before on any of my other bike powered cars.

Not fully pulling clutch surely?
Have you got adjustable rod on the slave cylinder?
Might be worth trying to pump it up and down fast to see if it needs bleeding first, as slight air in the system will stop it working fully.
might be plates sticking if not been used for a while,its the clutch that's dragging maybe even bleed it incase bit of air in system
Clutch drag, got the right bike oil in??
I've just done an oil and filter change today and possibly that's the issue.ill try bleeding it tomorrow and see and out on axle stands and
run through gears a few times.

No no, you need proper bike oil for the clutch!
It's proper bike oil. Specified for the k6 gsxr 1000
Someone I knew had this effect on a ford focus (there was a product recall shortly after as I remember), due to a hydraulic hose that was bulging
slowly if you kept your foot on the clutch - it gradually reduced the hydraulic pressure and let the clutch out.
I guess you'd get the same effect if the clutch master cylinder was passing.
