A standard 2.0 Zetec (black top) from an M reg Mondeo on fuel injection, what can be done to increase the power?
I understand that these are around 140bhp standard?

Oem injection ? Not a lot.
Yes and OEM ecu
Could potentially be ST170 injectors but not too sure.

Unlikely it would be over fuelling.
What would be needed to get close to 160/170 on one of these?

M reg, unless it has been swapped at some point would have been silver top based on my understanding
Blacktop was 1998 onwards I think.
Mine was from an m reg.
Standard 2.0l cams. GSXR 750 throttle bodies, arp bolts (rev a bit higher) lighter flywheel balanced with crank and and clutch. Home porter head, 4
into 1 manifold (not great set-up, long uneven length runners) emerald ECU made 169bhp. On Dave Walkers rolling road, hoped for a little more, but in
line with what I expected.
Engine was reasonably high mileage but on stripping and rebuilding could still see all the honing marks, with not a hint of any damage.

That really depends on how much you want to put into it and how much you want to change.
We have a blacktop with 220+ but that was not cheap to achieve
And lots of bits were done to get there reliably

Yeh I missed that one.
Depending on the rollers, 165 with breathing mods and stand alone management. 150 has been proven on the Oem injection with breathing mods.
To go past this you have two routes. Keep it N/a and spend lots of money on cams and headwork Or go forced Induction and spend even more.
My Blacktop was 145 standard, from Westfield. Added Omex throttle bodies, as it already had Omex ECU, and now running 164bhp with custom non cat exhaust. Hope this helps.
