zx10 sprocket nut
how do you hold the engine from turning on a zx10 when trying to torque up the sprocket nut
(engine is on workbench)

id fabricate a bar with two wholes in and bolt to prop flange to hold then there should be room to torque up the nut ?
Or screw two spare bolts into prop flange and put a leaver under one bolt then over other and that will hold enough to nip it up to correct
torque

I used a combination of the above. From memory mine (zx12) had to be done to 123 Nm (I could well be wrong) which was easily enough to turn the
engine over and needed something else to brace the adaptor.
You might be better getting it on and then torquing it up properly when it's in the car or on a stand unless it's secure on the bench.
