weber 32/36 carb with automatic choke

Morning

I've been reading the threads on pinto plumbing without a heater and it's slowly starting to make sense.
The only bit that's throwing me is the carb side of things. On several posts it's been mentioned that the block connection goes to the header tank. The only coolant connection I have is on the automatic choke.
Does this connect to the header tank? and I've seen several photos where the small outlet on the thermostat is blanked off and several where there is a pipe going towards the rear of the engine. Is there a reason for the two different set ups.
Problem is the more threads I read the more different ways there seems to be of plumbing in the engine is there a definative way and could someone explain how come different plumbing methods seem to work as to my small interlect you'd think there would just be one solution?

There are atleast two ways.... and both of them seem to work.

Choose which you please!
