I guess the fact that my temp gauge isn't working wont be an SVA fail???

don't think you have to have one... it might give the tester a bad first impression if things don't work?
Dont need one for the test but I would take it out and blank off the hole - my theory was that if one thing didn't work they would probably
assume others wouldn't either and look more closely.

or go to a car accessory shop (i think pretty much any of them will do) and but a clock that fits in the hole
pretty temp and oil presure gauges are non testable items.
if you are worried abouot it not working, blank it off or just leave it.
should you fail on it, you have good reason to appeal.
As said if it doesnt work id take it out. First impressions and all that.

I have now managed to get a replacement sender which i can fit tonight.... so all should be well
