What are people using to polish their exhaust manifolds these days and what process?

I didn't polish mine, but wrapped it...

I used autosol, used a drill with a buffer attached and a dremel for the smaller awkward bits
Not very locost but had mine ceramic coated by Zircotec. Dont wrap it, over time they will rust under the wrap

Tile acid for me, the stuff that dissolves concrete! Chemical attack and save the hardship of rubbing.
Any particular one Mark? Just looked and a lot of them say don't use on metal but I'm guessing you ignore that?

Or look up metal polishing in your area and let them do it on proper polishing equipment. No idea on cost but deffo a lot less aggro.

Don’t do the acid cleaning in a confined space, even with a mask it’s dangerous
The proper stuff for acid cleaning is called "Avesta BlueOne." It's a gel so tends not to splash.
Can't see the point myself as the more you clean it the quicker a manifold discolours.
The trick the Classic Bike Brigade use for shows is to run the engine very rich so the chrome downpipes stay shiny, or,
take the bike on a trailer and push it to the stand. I know of one bloke who doesn't put any oil in.
Another point is that quality materials polish up better. A 316L stainless manifold will lend itself to acid cleaning & polishing
but at the other end of the scale 409 Chrome Steel doesn't. You pays your money and make your choice as they say.
One more thing. If you breath the fumes in a confined space you can feel a burning sensation in your air passages, but on the
bright side it does remove nasal hair.

Fine emery cloth followed by Stainless Steel passivation paste.
Maybe the passivation paste may work by itself as it is used to remove welding discoloration.
bought polishing wheel and compound set of ebay about 12 quid bought filthy manifolds up on motorbike like brand new
Also to keep it clean, scotchbright cloth and raid the cupboard for the cillit bang !! i kid you not works ace
