Bikes are kind of organic, not like cars at all, just start building and see what comes out.

to be honest im finding out for the fabricator welder next door who has kindly relagated my welding involment done to just the tacking stage.
He fancy's building a chopper and is more than capable just needs some direction.
i think chopperhandbook.com will do him nicely.

Cars can be just as organic, its just that some bloke that decided to publish some car plans as a book and it kinda catched on.

Just look at chanel 4 there have been some pritty organic (if not GM) cars on the scrappy racers seires.
