anybody know how difficult it would be to register an offroad/motocross bike for use on the road?.

Would have to go through an MSVA, which is no where near as difficult as the car one, then its just dvla etc to deal with. Shouldnt be too difficult.

I've got a zxr750 with no headlights, indicators, brake light all you need is a speedo horn and a rear reflector for the daytime mot. Unless you plan on using it after dark thats all you need.
