I have twin weber 45 DCOEs (on a 2 litre zetec) and have read that the fuel pressure should be somewhere between 2.5 and 3.5 psi. My question is, at what point?

I have a solid state fuel pump at the rear of the car, which feeds to a petrol king regulator in the enginebay, this connects to the carbs via a flexi line about 8 inches or so long.

I have measured the fuel pressure at the regulator and it is exactly 3.5 psi. Measuring the pressure at the last carb is going to be a PITA. What do you think I should set the pressure at the regulator to?

pressure should be the same everywhere. However...

anyway, 3.5 is more than ample. At one point I was running 1psi, no starvation. It is all about flow with carbs rather than pressure (except too much is a nightmare)

The static pressure too high is the main concern with Webers.
The static no flow situation pressure will be the same at the regulator as the carbs.
So if the carbs aren't over filling when the pump is on and the ignition not running there should be no problem.
