i had a 540 E39, superb car and very entertaining. I now have an E36 M3 Evo, also a stunning car but returns 34 mpg as a daily driver.
Both can be had for less than 5k and if before 2001 you pay cheap road tax IIRC.
Seat Leon Cupra Type R... 1.8T 225hp?
you could build 20 locosts for that 
or buy 10 good second hand cars

Much as the XK8 is very desirable you would have to be 100% sure it was a good one or you could find yourself with multi thousand pound repair
bills.
I would be very tempted to buy one of the last P38 Range Rovers convert it to gas and either keep the remainder of the cash to deal with any
unforseen problems or but an MGTF for Mazda Miata or sunny days

SAAB Aero or better still a 2.3 Eco power chipped - smaller turbo so it spins up faster.
Both Q cars in the right hands and lots of cheap'ish tuning goodies.

If it isn't quick enough as standard fit an ETA 2.7 crank and 320 E30 conrods and make it a 2.7 with 200hp and lots or torque!

I love the old XK's but i have to be honest, i would go for an XJR. For that money you could buy a good one, possibly 2000/2001 ish. If you go for a V8 engined jag, pre 2001 make sure it has a steel lined engine and has had the timing chain tensioners upgraded to aluminium (i think) ones.
Can you get an early Audi S3 for that?
My flatmate has one, it goes like stink, the quattro grips amazingley and the brakes are awesome!

Thanks for the opinions guys. I think between you you have listed every car in the police force!!
I had heard of the tensioner problems as well as the suspension and bore liners.
Just something seems drawing me to it..!
I will carry on looking with a open mind.
