basic engine setting up

Hi, ive just found out what it feels like to rebuild an engine from the ground up and have it start straight away, not the cars engine yet, but in a pit bike :-) Its a single cylinder 150cc OHV 4 stroke.

My question is now, how would i know whether the spark timing and carb jets are correct? All i know at the mo is that it started second kick (after i remembered the kill switch) and seemed to tick over beautifully. I guess i must have got the valve timing all correct by this stage, but the spark pick up is adjustable, and so is the carb obviously so i just want to make sure i arent going to do any damage having to lean/rich or advanced/retarded. Thanks in advance
