Just measure halfway between the two end points?

As above, just count the turns lock to lock and then stop half way.

Some do (or did) but I have limited experience.
On those that don't, I turn to full lock one side, and count turns to full lock the other. Turn back halfway and that is central.
Must say a drilled hole would be dead handy to get it exact.

Yes, the rack should be centralised (ignore steering wheel position while doing this and refit after).

small triumph ones do,
remove the grease nipple, insert small (2mm wide) screwdriver, and there's a dip at the centre point.

else
rather than counting turns on the wheel, I would measure the end of the rack on max left, and max right, and take the halfway point

You'll never quite get the bump steer right if you don't have it centralised, but that's all in the fine tuning really.

just did my own escort quick rack today, i turned it fully one direction , marked with marker pen and counted the turns then centred from there. funnily enough its a 2.9 quick rack equates to 2.9 turns
